FAT kya hai? (What is Milk FAT?)
FAT ka matlab hai vasa (butterfat) — yaani doodh mein jo "cream" wala hissa hota hai, jisse makkhan, ghee aur khoya banate hain. Yeh doodh ka sabse kimti hissa hai. Jab aap doodh ko thodi der ke liye rakh dete hain, to upar jo peeli parat jam jaati hai — wahi FAT hai.

SNF kya hai? (What is SNF?)
SNF ka poora naam hai Solids-Not-Fat — yaani "vasa ko chhodkar baaki sab thosi padarth". Doodh mein paani aur FAT ke alaawa jo kuch bhi hota hai — protein, lactose (doodh ki shakkar), calcium, phosphorus, vitamins — yeh sab milkar SNF banate hain.

Doodh mein FAT aur SNF maapne ke kai tarike hain — purane zamane se lekar aaj ke electronic machines tak:
1. Lactometer — sabse sasta tarika

Agar aapka FAT ya SNF base se kam hai, to cut rate lagta hai — yaani katauti. Aur agar zyaada hai, to bonus rate milta hai.
Example calculation — bhains ka doodh
Maan lijiye ek doodhwale bhai ne subah ke 20 litre bhains ka doodh Amul collection centre par diya. Lactoscan mein report aayi:
- FAT: 7.0%
- SNF: 9.2%
Upar chart se rate ₹62/litre.
Kul aay = 20 × 62 = ₹1,240.
Ab sochiye — agar doodh mein 0.5% FAT kam ho jaata (yaani 6.5%), to rate girkar ₹56 ho jaata. 20 litre par aay = ₹1,120 — yaani ₹120 kam. Poore mahine (30 din) ka hisaab lagayen to yeh ₹3,600 ka nuqsaan hai, sirf 0.5% FAT girne se.
